Healthy Recipes for Makar Sankranti
Makar Sankranti is a very auspicious festival for Hindu’s.
Indian people celebrate this festival with great enthusiasm and fervour. This
festival is known with different names in different parts of India. Like, In
south India- it is popularly called ‘Pongal’, in Punjab and Haryana it is
called ‘Lohri’, in Assam it is called ‘Bihu’ , ‘Uttarayan or kite flying
festival’ in Gujarat and ‘Khichdi festival’ in Bihar.
The festival is an important occasion to mark the end of
dark phases and the beginning of a new phase in everyone’s lives or we can say
it’s a new year according to the Hindu calendar. On this occasion, people buy
new clothes, visit temples and eat special laddos, sweets and other
preparation. These special dishes are generally prepared with the sesame seeds,
bajra & rice and jaggery.
The purpose of eating these dishes are that, sesame contains
oil based constituents in every grain of sesame. During the cold season, skin
gets dry and flaky and requires moisture for keep it smooth and protected. Jaggery
adds sweetness with tons of nutrients into these dishes.
I’m preparing 3 different recipes for Makar sankranti by
using these special ingredients;
- Sesame seeds & peanut laddos
- Bajra Tikki
- Jaggery Rice
SESAME SEEDS & PEANUT LADDOS
Ingredients :
- ⅓ cup sesame seeds
- ¼ cup peanuts
- ¼ cup desiccated coconut
- ½ cup powdered jaggery
- 3 tablespoon water
- ¼ teaspoon cardamom powder
- 1 tsp oil for greasing
Recipe :
1.
Heat a pan and roast the sesame seeds on low
flame for 2-3 minutes.
2.
Now roast the peanuts and coarsely crushed it.
3.
Roast the desiccated coconut and add all the
ingredients into it.
4.
In the other pan, take powdered jaggery and add 3 tbsp water. keep on stirring the jaggery
so that it dissolves and cook till you come to a soft ball stage in the jaggery
solution.
5.
Add all the dry roasted mixture with the jaggery
solution very well.
6.
Make small laddos and store it into airtight
container.
Ingredients :
- 1 cup Bajra flour
- 1/3 cup suji
- 1/3 cup sesame seeds
- 1 pinch baking soda
- 1/2 cup powdered jaggery
- Oil for frying
Recipe :
1. Heat a pan and roast the sesame seeds on low
flame for 2-3 minutes.
2.
In the other pan, take powdered jaggery and add
3 tbsp water. keep on stirring the jaggery so that it dissolves and make syrup.
3.
Mix all the dry ingredients into a bowl and
knead it with jaggery syrup.
4.
Make small roti with this dough and deep fried
it on medium flame.
JAGGERY RICE
Ingredients :

Rice 500g
·
Jaggery 300g
·
Dry fruits 50 g
·
Fennel 1 tbsp
·
Green Cardamom 6 pieces
·
Desi Ghee Half cup
·
Water 2 -1/2 Glasses
Recipe :
1. In a cooking pot,
add desi ghee, green cardamom, fennel, dry nuts and sauté it.
2. Now add jaggery
and water. Boil it until jaggery melts.
3. Afterward, add
rice and cook until water remains in low quantity then steam it.
4. Now your
tasty jaggery rice is ready to serve.
